Quick & Easy Chopped Summer Salad Recipe | Healthy Meal Ideas

One good thing that has come out of the pandemic is the fact that I have been working from home and on occasion, Eddie does too. On occasion, we get to share some lunch-time meals together. Because we have plans to go grocery shopping tonight, so I didn’t really know what I was going to be able to throw together for lunch. It turns out, some of the best lunches are those that are just thrown together from whatever you can find in the fridge. If you’re lucky, it can turn out to be an amazing summer salad! You can use a variety of different toppings, depending on what you like. I like to try new ingredients all the time. It is sometimes surprising how well some fruits and vegetables go together.

Summer Salad Ingredients

Chop your items, throw it on your greens, add a little dressing and mix it up. Tip: The more chopped the ingredients are, the better. Eating your salad will be easier more enjoyable when every bite is a bite-sized piece. Tip #2: Throw a lid on the bowl and really shake it up. This will ensure that the dressing and chopped items will be evenly distributed throughout.
