I don’t know why but recently I have been eating some variation of a salad for lunch almost every day, but I’m not mad about it. I like to eliminate bread from my lunch everyday and it is way too easy to just grab a sandwich when you’re looking for something quick and easy. What I’ve found is that there are so many ways to spice up a salad, that it can actually be pretty fun.
I came up with this salad just by finding whatever I had in the fridge at the time. It’s actually kind of fun to get creative and try new things. Like I said, this is just what I had at my house when I was looking to make a salad, so I challenge you to go through your fridge and see what you can add to your salad to spice it up a bit.
Easy Lunch Salad Recipe
The reason I posted this is to encourage you to get creative to make a healthy lunch with what is already in you fridge. Here’s what was in mine:
- Spring Mix
- Green Olives
- Broccoli
- Boiled Egg
- Turkey
Since I’ve made this, I have created about 10 other different salads with other random things I’ve found and to be honest, they are my favorite kind of lunch and they are healthy. For dressing, I usually just use a little bit of oil and balsamic or apple cider vinegar.

I love making salads out of random stuff in my fridge too! The one you have made looks great. I would just take off the turkey because I’m vegetarian! I have different tastes for things every day, so changing it up is perfect.
