Peanut Butter Pitaya Smoothie Recipe

I just discovered one of my new favorite and super easy smoothie recipes! Seriously – it tastes like ice cream. I am all about simple and easy creations when it comes to smoothies. This just requires three ingredients – peanut or almond butter, frozen pitaya and your choice of milk or water (I use almond milk).

You can use your own variation of these three items. This is just all I had at my house!

You can typically find pitaya at your local grocery store in the frozen section or you can get it on Amazon. Most people know it from the famous Starbucks Dragon Drink. If anything, it’s probably the prettiest thing you can eat. The pink color just makes me so happy.

All you’ll need to do is throw a scoop of the frozen pitaya cubes, a spoonful of peanut butter and about half a cup of your milk/water. If you like it thicker you can add ice, but the peanut butter gives it a thicker consistency. I throw all of it in the blender and blend until smooth. Pretty easy, I know – but I just had to share it with ya!
