Easy Meal Prep Recipe

This has been a long time coming but I am excited to finally share with you something food-related, an easy meal prep recipe! Like a lot of people, I tend to tell myself I am going to do something and it takes a long time for me to actually do it. But, I finally took myself to the grocery store and I am happy I did. If I can keep this up, I will start sharing my weekly cooking recipes so we can do this together.

This was a really quick and easy recipe that I will probably use a lot. It can be changed up quite a bit so it won’t get too boring. Feel free to use this and change it up to suit your taste buds!

Easy Meal Prep Recipe Ingredients

Bell pepper

Ground chicken

Rice

Sweet Potato

Onions

Salt & Pepper

Parsley

Your choice of seasoning

Step by Step

  1. Start by putting a pan on the stove and sautéing chopped onions. While those are warming up, cut the stem out of the bell pepper and clean out the inside. You can put the pepper in the oven to soften it or microwave it for a few minutes.
  2. Depending on how you make rice, either boil it on the stove or put it in a rice cooker. This takes about 20 minutes so you can do this at the beginning so it cooks while you are preparing the rest of the meal.
  3. After the onions cook for a few minutes, add in the ground chicken (or turkey or meat of your choice). Let this cook together and add in spices of your choice. I added a pinch of salt and pepper and some Montreal Chicken seasoning (so yummy). 
  4. After your rice and chicken are cooked and cooled, mix them together. You can then use a spoon to scoop the filling into the bell pepper. If you so choose, you can add cheese to the top. 
  5. For a side, I warmed up a sweet potato, peeled the skin, mashed it with a fork and added a touch of salt and pepper.

This only took me around 40 minutes and I am now prepped for the week. If you have the time (and trust me you do), learn to cook, experiment with different foods and eat healthier. If you try this, send/snap me your pictures!

    This looks like a great start to the week! I am not so great with meal prep in advance, but I love it when I make it happen. I think my whole family does better in those situations.

    I’m a huge meal prepper. I prep all my meals for the month (just Dinners) because 4 kids, two adult we are a busy household. I’ll have to add this into the rotation. I think it will go over well in our home.

    I’ve (finally) started to really meal-prep and it’s made my life SO much easier! And during the week I tend to make meals that “piggy-back” one another with ingredients so I can utilize leftovers and have minimal waste.

    I do like stuffed peppers. In my country we have a traditional recipes for them – we stuff them with raw meat, cover with tomato sauce and put them in the oven for a couple of hours. They turn out delicious! We eat them afterwards with sour cream on top. 🙂
